A modern speakeasy tucked inside the Colegio Superior de Gastronomía, reached through its own secret entrance. Stained-glass panels in clear, ruby and emerald echo the three 'jewels' of the 1882 Bijou cocktail, while the Rubik's Cube Twisted menu unlocks new flavour profiles with every turn of the cube — velvet curtains, Mondrian-inspired interiors and low light complete the scene.
