Opened in May 2025 by Tokyo-born Gento Torigata, formerly bar manager at Kwãnt, Waltz pairs a jazz-and-nature-inspired drinks list (matcha Old Fashioned, white asparagus and fresh pea) with a special menu served only at the 12-seat bar.
